CITRONOVÝ KOLÁČ
Na 1 otevírací dortovou formu o průměru 26 cm (12 kusů)
200g měkkého másla
200g cukru
4 vejce
1 lžíce nastrouhané kůry z chemicky neošetřeného citronu
250g světlé bezlepkové mouky (např. Finax nebo Mix C od dr. Schära)
2 lžičky prášku do pečiva
špetka soli
4 citrony
100g moučkového cukru
pečicí papír a tuk na formu
Doba přípravy: asi 30min.
Pečení: asi 35min.
1) Předehřejeme troubu. Formu vyložíme papírem na pečení a tence namastíme okraj. Máslo s cukrem utřeme do pěny. Vejce rozbijeme, oddělíme žloutky a bílky. Žloutky a citronovou kůru postupně vetřeme do másla. Mouku s práškem do pečiva prosijeme a také vmícháme.
2) Z bílků a soli ušleháme tuhý sníh a opatrně ho vmícháme do těsta. Těsto naplníme do formy a uhladíme. Pečeme ho v troubě při 200°C (střed, horkovzdušná 180°C) 30 – 35min. dozlatova.
3) Citrony vymačkáme a šťávu utřeme s moučkovým cukrem. Do ještě horkého koláče uděláme šašlikovým špízem nebo dřevěnou špejlí hodně dírek. Koláč potíráme citronovým sirupem, dokud tekutinu úplně nevstřebá. Koláč necháme na kuchyňské mřížce vychladnout.
MANDLOVÉ ŘEZY
Na jeden plech (asi 20 kusů)
Na těsto
1 kelímek smetany
1 kelímek cukru
špetka soli
3 vejce
2 kelímky světlé bezlepkové mouky
1 balíček prášku do pečiva
Na obložení
150g másla
3 lžíce medu
1 kelímek cukru
1 balíček vanilkového cukru
200g mandlových lupínků
pečící papír na plech
Doba přípravy: asi 35 min.
Pečení: asi 3O min.
1) Předehřejeme troubu. Plech vyložíme papírem na pečení. Smetanu, cukr a sůl utřeme do pěny. Pomalu vmícháváme vejce. Mouku smísíme s práškem do pečiva a přimícháme do těsta. Všechny přísady dobře promícháme. Těsto dáme na plech a pečeme v troubě při 200°C (střed, horkovzdušná 175°C) 12 min.
2) Na obložení zahřejeme v hrnci máslo s medem, cukrem a vanilkovým cukrem, přidáme mandlové lupínky a necháme vše vzkypět. Hmotu natřeme na předpečené těsto a pečeme dalších 12 – 15 min.
CHLEBA
Na 1 kulatou formu o průměru 30 cm (22 krajíců)
1 kostka droždí (42g)
1 lžička cukru
530 ml vlažné vody
500 g světlé bezlepkové mouky (např. Mix B od Schära)
50 g pohankové mouky
50 g lněného semínka
50 g jahelných vloček
50 g sójových vloček
50 g slunečnicových jader
2 lžičky soli
1 lžíce jablečného octa
3 lžíce řepkového oleje
tuk na vymazání formy
bezlepková strouhanka na zpracování
Doba přípravy: asi 30min.
Odpočinek: asi 40 min.
Pečení: asi 1 hod.
1) Droždí rozdrobíme a hladce rozmícháme s cukrem a 100 ml vlažné vody. Necháme ho několik minut vzejít. Formu vymažeme tukem a vysypeme bezlepkovou strouhankou.
2) Mouku smícháme s pohankovou moukou, lněným semínkem, jahelnými vločkami, sójovými vločkami, slunečnicovými jádry a solí. Přidáme vzešlé droždí, jablečný ocet, 1 lžíci oleje a zbytek vody a asi 5 min. důkladně hněteme – nejlépe v kuchyňském robotu.
3) Těsto dáme do formy. Navlhčenou stěrkou ho uhladíme. V teplé troubě necháme těsto 30 – 40 min. kynout. Těsto by mělo nakynout zhruba o polovinu svého objemu.
4) Formu vyndáme z trouby. Troubu předehřejeme. Chleba pečeme při 225°C (střed, horkovzdušná 200°C) 50 min. Potom chleba potřeme 2 lžícemi oleje a 10 min. dopékáme. Po upečení ho vyklopíme na kuchyňskou mřížku a necháme vychladnout.
KRÉMOVÁ HOUBOVÁ POLÉVKA
Pro 4 osoby
750 ml zeleninového vývaru
1 cibule
200 g čerstvých hub (např. žampiony nebo hlíva ústřičná)
2 lžíce řepkového oleje
2 lžíce světlé bezlepkové mouky
50 ml mléka
50 ml smetany
50 ml bílého vína (lze nahradit 2 plátky bezlepkového taveného sýra)
1 lžíce citronové šťávy
sůl
muškátový oříšek
bílý čerstvě mletý pepř
2 lžíce nasekané pažitky
Doba přípravy: asi 20 min.
1) Zeleninový vývar přivedeme k varu. Cibuli oloupeme a nakrájíme na kostky. Houby očistíme a nakrájíme na plátky. Několik plátků odložíme stranou na ozdobu.
2) V hrnci zahřejeme olej a necháme v něm zesklovatět cibuli. Přidáme houby a za 2 min. je osmahneme. Poprášíme je moukou a smažíme za stálého míchání další 2 min. Přilijeme horký zeleninový vývar a za nízké teploty ho necháme 6-8 min. povařit.
3) Mléko a smetanu přidáme k polévce a v mixéru nebo tyčovým mixérem vše rozmixujeme. Polévku ochutíme vínem, citronovou šťávou a pepřem. Posypeme ji plátky hub ponechanými stranou a nakrájenou pažitkou. Okamžitě podáváme.
